Dignity Health Cancer Institute Teaching The Value of Nutrition
Cooking Classes Offered to Cancer Patients and Those in Need
PHOENIX, Ariz. (Dec. 9, 2025) – Forming a healthier relationship with food is the primary goal of cooking classes offered at the Dignity Health Cancer Institute at St. Joseph's Hospital and Medical Center. Known as the Nourishment Center, these classes are held in the cancer institute’s education kitchen, a space where cancer patients and those struggling with food insecurity can learn how to make dishes that will fill their stomachs and enrich their lives.
Each month, the Nourishment Center's curriculum zeroes in on a specific health issue. Participants learn to create a main dish and a dessert designed to address that particular concern. For instance, the December 9th class in 2025 will delve into the topic of inflammation, with lessons on crafting nourishing mashed potatoes with a lower glycemic index alongside delicious pumpkin pie made with vegan protein powder and a healthy fudge.
All the classes, no matter the month, provide recipes that boast numerous digestive benefits and promote gut health. Taking a holistic approach, participants are encouraged to fill out worksheets during class to check in with how they feel about their nutrition as well.
“We want everyone who takes our classes to feel more prepared when taking control of their gut health,” says Shilpa Vasireddy, the director of Dignity Health Cancer Institute. “We are honored to be a part of their journey towards becoming more mindful and more replenished as a result.”
The food for the class is nutrient-dense, mostly organic, and some of it is donated by local charity Midwest Food Bank.
